Recipes from Nina Capri

After dazzling us with her homage to the food of St Tropez, Nina Parker  has now set her sights on the spectacular Amalfi coast in Nina Capri.  After university, Nina joined the team at L’Anima, London as a commis chef and  fell in love with their style of pastry and cooking using fresh Italian ingredients with a rustic touch. In her new cookbook, she draws on this  passion for Italian cuisine to present us with over 100 original  recipes. With many gluten-free and dairy-free options, Nina offers a  lighter, healthier approach in her cooking.

Here we share some of our favourites, straight from the charmed cosy streets and clear blue sea of Capri.

Nina’s method for making Squash Gnocchi creates a much lighter, fluffier result than many other recipes. These are delicious on their own or amazing paired with tomato sauce.

The origins of spaghetti alla puttanesca date back 60 years, to a popular restaurant on the island of Ischia frequented by the Dolce Vita. This recipe for  Dolce Vita Puttanesca encapsulates the simple but delicious combination that came about as a chance invention by Sandro Petti.
